Yellow Curry Chicken on a Bed of Fluffy Yellow Rice



It is in the middle of the week and Poppa needs some lunch for tomorrow, so I thought i would take you all along for the ride as I make his meal.

He loves poached chicken so much and I want to change things up a bit, so I will make him the poached chicken, but I am playing with the seasonings. I will be making him a Yellow Curry Poached Chicken serced over a bed of fluffy yellow rice. Most of the time yellow rice is sticky, bu Poppa Bear loves light and fluffy rice. I will gladly oblige him.


Ingredients for the Yellow Rice:

1/2 onion (diced)

1 Cup of long grain rice

2 Tsp of Salt

1 Bouillon Cube

1/4 Tsp of Turmeric

1/4 Tsp of Granulated Garlic Powder

1/4 Tsp of Onion Powder

2 Cups of Cold Water

2-3 Tbsp of Cooking Oil

Cooking Directions for Rice


Because I need the chicken to be on a bed of rice, I will be cooking the rice first. Heat the 2 Tbsp of Vegetable Oil on a medium heat.


When the oil is hot enough, add in the onions.



When the onions have softened then you can add in the 1 cup of rice.

Season at the time with salt, pepper, onion powder, garlic powder, and turmeric.

Give the rice time to toast a bit, but not too much.

After everything this blended and rice slightly toasted, then add in 2 cups of cold water and raise the heat to a medium high setting.

Bring the water up to a rapid boil and let the rice sit in it for a minute before covering and lowering the heat to a low setting and setting the timer for 25 minutes.
